Delicious Broiled Torsk

I rarely can get my family to eat fish. They like to say "Fish are friends, not food". My response is always "Fish are friendly food." If the fish is disguised under breading they are more likely to eat it. So, I decided to try Torsk. Torsk is a Scandinavian dish dish of poached and broiled cod with butter. This simple recipe was a hit with the gang. 

Broiled Torsk


Ingredients:

        6 (6 ounce) Cod Fillets
        6 cups Water
        1 cup Sugar
        2 Tbs Salt
        1 1/2 cups Butter, melted
        1 dash Paprika


Directions:

  1. Preheat broiler.
  2. Lightly grease a cookie sheet.
  3. Place the fish in a large saucepan.
  4. Mix together the water, sugar, and salt.
  5. Pour the water-mixture over the fish. The water-mixture should fully cover the fish, if it doesn't add more water.
  6. Bring the water to a boil over a medium-high heat.
  7. Boil for 3 to 5 minutes.
  8. Remove fillets from water.
  9. Blot on paper towels to remove excess water.
  10. Brush with 6 tablespoons melted butter.
  11. Sprinkle with paprika.
  12. Broil for 8 to 10 minutes per inch of thickness, or until the fillets are golden brown.

Serve with the remaining melted butter.

Serves 6

Cajun Shrimp Scampi

Much to my delight my youngest and his girlfriend decided they were going to make this delicious meal.They did an amazing job and it was delicious. I'm proud of them!

Cajun Shrimp Scampi


Ingredients:

        1 lb Angel Hair Pasta, cooked al dente
        2 Tbs Olive Oil
        1/4 cup Shallots, chopped
        2 cloves Garlic, minced
        2Tbs Cajun Seasoning
        1/2 tsp Cayenne
        1/4 tsp Black Pepper
        1 lb Shrimp, peeled and deveined
        1/2 cup White Wine
        2 Tbs Butter
        2 Tbs Fresh Parsley, chopped
        2 Tbs Lemon Juice
        1/4 cup Parmesan, grated


Directions:
  1. Cook the pasta as instrcted on the package.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the shallots and garlic and cook for two minutes.
  4. Stir in the cajun seasoning, cayenne pepper and black pepper and cook for 1 minute.
  5. Add the shrimp and cook until just pink, about two minutes.
  6. Pour in the white wine and simmer until reduced by half, about three minutes.
  7. Reduce the heat to low and stir in the butter, parsley and lemon juice.
  8. Simmer until the shrimp is cooked through.
  9. Serve on top of pasta.
  10. Sprinkle with parmesan.

Grilled Shrimp with Avocado Salsa

I am a serious seafood lover. So when I found this recipe at Woman Know Thyself's Facebook page, I had to borrow it. It is so amazingly delicious!


Grilled Shrinp with Avocado Salsa


Ingredients:


For the Shrimp:

        16-20 count Prawns, peeled and deveined
        18 Cherry Tomatoes
        2 Tbs Fresh Thyme
        3 Tbs Shallots, minced
        1 Tbs Cumin    
        2 Tbs Basil, chopped
        ¼ cup Extra-Virgin Olive Oil
        Kosher or Sea Salt and Cracked Black Pepper to taste
        ½ Lemon (use while grilling)

For the salsa:

        1 ripe avocado, diced
        1 small red onion, diced
        1 small roma tomato, seeded and diced
        2 tablespoons cilantro, chopped
        ½ lemon, juiced
        2 tablespoons olive oil
        1 tablespoon white vinegar
        Kosher or sea salt and cracked black pepper to taste



Directions:


For the Shrimp:

  1. Soak the skewers in water for six hours before using.
  2. Marinate the shrimp in all the ingredients, except the cherry tomatoes and lemon, for at least 4 hours before grilling. 
  3. Skewer the prawns with the tomatoes and grill, 3-4 minutes each side. 
  4. Season with the lemon juice, salt and pepper while grilling.

For the Salsa:

  1. Mix all the ingredients lightly and let set in the refrigerator for 15 minutes.

Pasta in Clam Sauce



I saw this recipe in It's Yummilicious! and just had to make this.  It was just as delicious as it looked.  We served it with Garlic Bread (which we cooked on the grill) and my seafood haters gave me their clams so all was good. 



Pasta in Clam Sauce



Ingredients:


        2 Tbs Olive Oil

        3 large cloves Garlic, minced (more or less, according to taste)

        1 med Onion, diced

        3 Tbs Parsley

        1 Tbs Oregano

        2 cans (12-ounces each) Chopped Clams

        1/2 cup Fish Stock

        2 Tbs Unsalted Butter

        1 lb Spaghetti (or your favorite variety and shape of pasta)

        Parmesan cheese


Directions:

  1. In a medium skillet, heat oil over medium-low heat. 
  2. Add garlic and onion and sauté until translucent, but not browned. 
  3. Add clams with the liquid, wine, parsley, and oregano. 
  4. Bring to a boil.
  5. Simmer until liquids are reduced, about 10 minutes.
  6. Meanwhile, cook pasta according to package directions for al dente. 
  7. Drain, reserving some of the cooking water. 
  8. Add the pasta to the sauce. 
  9. Add the butter and toss well.
  10. Cook about one minute, adding some of the reserved water if needed to loosen the mixture.

Note:

      If desired, add a little more fresh parsley for color. 

        Serve, offering the Parmesan cheese separately.
