Mom's Tuna Over Rice

I grew up on Tuna Over Rice. This was my Mom's every-other Wednesday night special. I have a theory on how it came to be a bi-weekly dish. My Mom grew up during the Great Depression. Canned tuna had already been around for a few decades by then (1904), and Campbell's created Cream of Mushroom in 1934. In 1950 my parents married and for a few years money was tight while Dad finished his military carrier. As the years went by their children began marrying and moving out while my folks financial situation went to upper middle class. I feel like Mom kept cooking that dish because of it's simplicity and because it darn tasty. 

As mentioned before in a previous blog my Mom never let us near the kitchen while she cooked so we had to figure out her recipes after she passed. I never attempted to try this recipe because I was never given the opportunity. I tried once but my children's father kept asking for tweaks as I cooked and it turned into Tuna Noodle Casserole. The other day my oldest decided that he was interested in trying it. I had been lucky enough to have talked to Mom about this recipe before she was gone and knew it was only three ingredients. Out of curiosity I did look up variations but they seemed like cooks were trying too hard. The recipe is perfect on its own. Maybe you could add some garlic. It doesn't need it but my family believes "when in doubt add more garlic."

So here it is, at long last, my Mom's Tuna Over Rice.

Mom's Tuna Over Rice


Ingredients:

        2 Cups Uncooked Rice
        4 Cups Water (technically this is a fourth ingredient but I don't think it counts)
        2 Cans Cream of Mushroom
        2 Cans Tuna, drained (of course the liquid goes to the cats, that's the rule)


Directions:
  1. Combine rice and water in a rice cooker (or however you prefer to cook it). Cook until done.
  2. Mix cream of mushroom and tuna in a bowl.
  3. Plate the rice and pour the tuna mixture over the top. 
  4. Serve with side of choice.
Makes 5 servings.

Spanish Rice

Lately I've been having some fun with recipes, instead of just cooking the same-old same-old. I've been making this recipe for Spanish Rice that everyone seems to enjoy. It's simple and my fussy eaters have been eating it with no encouragement.

Spanish Rice


Ingredients:

        1 cup Uncooked Rice
        1/4 cup Butter
        1 Medium Onion, thinly sliced
        1/4 Medium Green Pepper, diced
        2 cups Stewed Tomatoes, undrained
        1 tsp Salt
        Dash Pepper
        1 cup Water


Directions:
  1. Heat butter in sauce pan.
  2. Add onion, green pepper and rice.
  3. Cook and stir over high heat until lightly browned.
  4. Add tomatoes, water, salt, and pepper. Mix well.
  5. Bring gently to a boil.
  6. Cover tightly, lower heat.
  7. Simmer gently for 30 minutes.
Serves: 4-6

Smoked Sausage and Chicken Gumbo

We wanted to celebrate Mardis Gras this year with a dish from New Orleans. After searching Pinterest I found this recipe from Iowa Girl Eats. There was just the right amount of kick to this Gumbo and everyone, including the fussy ones, loved it.

Smoked Sausage and Chicken Gumbo


Ingredients:

        1 tsp + 3 Tbs Olive Oil



        14 oz Andouille Sausage, sliced into half-moons
        4 skin-in, bone-in Chicken Thighs
        1 tsp + 1 Tbs Cajun Seasoning
        6 Tbs Flour
        1 Green Bell Pepper, chopped
        2 small Celery Stalks, chopped
        1 small Onion, chopped
        2 cloves Garlic, minced
        2 Tbs Tomato Paste
        56 oz low-sodium Chicken Broth
        2 Bay Leaves
        1/4 tsp Smoked Paprika
        1/4 tsp Cayenne (more or less according to taste)


Directions:

  1. Heat 1 teaspoon oil in a 6-quart Dutch oven or soup pot over medium-high heat.
  2. Add sausage then saute until browned, 5-7 minutes.
  3. Transfer to a plate then set aside.
  4. Season both sides of chicken thighs with 1 teaspoon Cajun seasoning then place skin side down in Dutch oven.
  5. Sear on both sides until golden brown, 3-4 minutes a side (does not need to be cooked through).
  6. Transfer to plate with sausage and set aside.
  7. Remove Dutch oven from heat for a few minutes to cool slightly then place back over medium heat.
  8. Add remaining 3 Tablespoons oil.
  9. Sprinkle in flour and whisk constantly until mixture is the color of caramel, 10-15 minutes (this is your roux.)
  10. Add bell pepper, celery, and shallot or onion then saute until vegetables are slightly tender, 5 minutes, scraping the bottom of the Dutch oven often with a wooden spoon to make sure roux doesn't burn.
  11. Add garlic and tomato paste then saute for one more minute.
  12. Add a couple big glugs of chicken broth at a time to the Dutch oven, using the wooden spoon to scrape up any bits on the bottom.
  13. Add remaining chicken broth, remaining 1 Tablespoon Cajun seasoning, bay leaves, smoked paprika, cayenne pepper, sauteed sausage and chicken thighs then turn heat up to bring gumbo to a boil.
  14. Turn heat down to medium then simmer uncovered for 1-1/2 hours, occasionally skimming off the fat that rises to the top.
  15. Transfer chicken to a cutting board then remove and discard skin and bones.
  16. Shred chicken then add back into the gumbo.
  17. Remove bay leaves then taste and adjust seasonings if necessary.
  18. Serve over cooked white rice.
Serves 6

Cah Kangkung Udang

I want to apologize.  I can't believe it's been so long since I did a food blog.  I promise I will try not to have the blogs so few and far between anymore.

Doesn't this look amazing?

My son, William, saw this on another food blog I used to use, and wanted to make it on his night to cook.  He did an awesome job with just a little help from me.  It was delicious!

Cah Kangkung Udang is an Indonesian dish made by a wonderful Indonesian woman I knew.


Cah Kangkung Udang


  • Ingredients:
        7 ounces Large Shrimp
        10 oz Spinach
        1 Onion
        2 Chilies, or adjust to taste
        2 cloves Garlic
        1 Tbs Butter
        2 Tbs Soy Sauce
        1 Tbs Sesame Oil
        1 Tbs Oster Sauce



Directions:

  1. Wash spinach and cut to size. 
  2. Finely chop onion and garlic.   
  3. Seed and chop the chilies elongated  
  4. Heat the butter in a pan. 
  5. Put chopped onions, garlic and chilies in the hot butter.  
  6. Saute until fragrant. 
  7. Add the shrimp.  
  8. Stir well. 
  9. Add soy sauce, sesame oil and oyster sauce.  
  10. Cook briefly (1-2 minutes). 
  11. Add the spinach. 
  12. Stir fry briefly until the leaves are flaccid.

Serve with hot rice.


Serves 3-5.
